Southern-style Biscuits
This easy-to-make buttermilk biscuit recipe is perfect for elevating simple dinners or making any meal feel special. These biscuits are great for sharing with family and friends!
Ingredients:
- 2 cups (240 grams) all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons granulated sugar
- ¾ teaspoon sea salt
- ¼ teaspoon baking soda
- 6 tablespoons (85 grams) ice cold, unsalted butter, plus 2 tablespoons set aside
- ¾ cup (180 ml) cold buttermilk
💡Tip: you can substitute the butter milk with milk + cream + lemon or sour cream + milk. We're looking to introduce acidity and sourness for flavor and ensure gluten doesn't develop.
Instructions:
- Preheat your oven to 425°F (218°C).
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda.
- Cube the cold butter and sprinkle it into the flour mixture.
- Use your hands or a pastry blender to work the butter into pea-sized pieces.
- Gently drizzle the cold buttermilk into the mixture while stirring until just combined. Be gentle and avoid over-stirring.
- Lightly flour a work surface. Pat the dough into a rectangle approximately 10x8 inches.
- Fold the dough in thirds, like a letter, and turn it 90 degrees. Repeat this folding and turning process three times to create flaky layers.
- Roll the dough to about ½ to ¾ inch thick.
- With a bench scraper, or knife, cut the dough into 8 equal pieces (or use a round cookie cutter if you feel fancy).
💡Tip: at this point, you could freeze the biscuits for up to a month.
- Place the biscuits on a baking sheet lined with parchment paper, positioning them close together so they rise evenly.
- Brush the tops of the biscuits with buttermilk.
- Bake for 12-15 minutes, or until golden brown.
