Fagioli e olio

Ingredients (for 4 people)

  • 400g of dry white beans (Cannellini are preferrable).
  • 2 L of chicken stock, veggie stock or cold water.
  • 2 sprigs of sage.
  • 2 clove of garlic.
  • Salt and pepper to taste.
  • Oilve oil

Preparation

  1. Soak the beans overnight in cold water.
  2. Drain the beans, put them in a pot with any stock or cold water. Add the garlic, sage, 2 large pinches of salt, pepper and a glug of olive oil.
  3. Cook on medium low heat for at least 40 min. The liquid needs to bubble gently.
  4. After 40min, taste a bean for consistency. If you want it softer, cook it longer. If you want a more firm bean, remove from heat.

Serving

Serve on a plate with a very good olive oil. shredded sage and a pinch of salt (if needed). Devour with bread.
